easy black garlic stir fry

Aren’t we all always on the hunt for a good weeknight meal? I still have the same wok I had in my first share house back in Melbourne, and I love a good stir fry meal- an excuse to whip out the wok and prove its ongoing worth. This is our easy black garlic stir fry recipe- substitute your protein of choice and use any veggies that are looking a little sad in the bottom of the fridge!

Ingredients:

  • 2 chicken breasts/ steak/ prawns/ tofu sliced

  • 1 red capsicum, sliced

  • 1 zucchini sliced

  • 1 head of broccolli

  • 1 small onion, sliced

  • 2 cloves white garlic, minced

  • 4 cloves black garlic, sliced

  • 2 tbsp vegetable or peanut oil

  • 1 tbsp soy sauce (gluten free in our house)

  • 1 tbsp oyster sauce

Instructions:

  1. Heat a large skillet or wok over high heat. Add the vegetable oil and swirl to coat the pan.

  2. Add the sliced protein and cook for 3-4 minutes, until browned and cooked through.

  3. Add the white garlic, sliced bell peppers and onion and cook for an additional 2-3 minutes, until the vegetables are slightly softened.

  4. Add the sliced black garlic, soy sauce, and oyster sauce to the pan and stir to coat the chicken and vegetables. Cook for 1-2 minutes, until the garlic is fragrant. Add water if starting to burn.

  5. Serve hot with rice or noodles. Sprinkle some sesame seeds on top or some coriander if you have some in the garden.
